Wisconsin Brats

For reasons passing understanding, Wisconsin Brats are not in the book. But given the Packers imminent triumph in the Super Bowl, and given Audrey's "what are brats, anyway?" question, I decided it was necessary.

For those of you unfamiliar with this international delicacy, you boil the brats in beer for 12-15 minutes, then grill on direct heat for approximately 5-7 minutes to brown/crisp.

Mmmmmmm....and...GO PACK!

  1. Actually, they are not only in the book, but he gives directions for how to cook Johnsonville brats so you don't miss any of the Packers game! The recipe is called Bratwurst "Hot Tub" and is on page 341. I like a combo of your recipe and his. Boil first in beer and then crisp for a minute or two on both sides on direct heat and move to indirect for the last 10 minutes or so. We will be making these for the game.

  3. Suggest adding some onions and green peppers to the "Hot Tub" of beer. Serve the grilled Brat on a sub roll, and toss some of the onion and green peppers on it, with mustard OF COURSE. Yummmm.

    Wonder why after boiling and browning he thinks he still needs 10 minutes on indirect? Also, I boil for at least 30 minutes, maybe more. Basically they are cooked before they even hit the grill.

  4. THIRTY MINUTES? That seems like a long time. I agree re the onions and peppers in the hot tub. I actually rarely use the hot tub because we end up serving them right away but I think they are better that way.

  5. Roy has changed his flight home specifically for this game and is very much looking forward to the brats. I am surprised that Audrey has not experienced Wisconsin Brats before. Of course, I haven't had them since I was about 4, so no judgement here... And just for Roy's sake I will mention Boca Brat here to ruin his appetite (aka Tofu Brats!!!!)
